The month of May of this year started a new frenzy in the world of coffee when Starbucks introduced a new pink and purple swirl of a fairytale drink: the unicorn frappuccino. Starbucks itself described the drink as best it could: “The magical flavors start sweet and fruity and become pleasantly spicy.” And then they boasted, “No more pink and blue fairy dust sprinkled with whipped cream.”
Now, such a drink has received rather mixed reviews and is one of those love or hate scenarios. We are pleased that the drink itself is only available for one week.
Even so, the introduction of a magical drink sparked a new craze that you absolutely must try: Mermaid Lemonade. The recipe itself is from The Glowing Fridge and the colorful mix is as tasty as it sounds. Not only is it a delicious drink, but it’s also very healthy. The Caribbean blue color comes from spirulina powder, an alga that is rich in vitamins, minerals, and antioxidants. Let’s take that, the same powder also helps control allergies thanks to its anti-inflammatory properties. Oh yeah, there is also coconut vinegar, which has health benefits similar to apple cider vinegar.

Mermaid Lemonade Ingredients:
- 3 cups of filtered water
- 1/2 lemon squeezed
- 1 tablespoon apple cider vinegar or coconut
- 1 or 2 teaspoons maple syrup, optional (or agave syrup)
- 1 / 8-1 / 4 teaspoons of spirulina powder
- A handful of ice cubes
Pour the water into a glass or other cup and add all the ingredients until well mixed.
