Stuffed Acorn Squash
Combine fresh blueberries, chopped walnuts, and 4 tbsp. Sugar cane. Halve the acorn gourd and place in it. Fill the pumpkin with the blueberry mixture and garnish with a slice of butter. Cover with foil and bake for 25 minutes at 400 degrees.
We remove the stems from the mushrooms and place them on a baking tray.
Brush with olive oil. Pour the cranberry sauce over the mushrooms, then place a small piece of brie cheese on top of each mushroom. Garnish each mushroom with a walnut. Bake at 400 degrees for 25 minutes. Sprinkle the mushroom bites with thyme.
Acorn Squash With Brussels Sprouts
Peel the pumpkin and cut it into pieces. Slice Brussels sprouts and halve. Combine the acorn squash and Brussels sprouts in a bowl. Drizzle with olive oil and maple syrup and sprinkle with cinnamon, salt, and pepper. Stir to combine, then pour onto a baking sheet. Bake at 400 degrees for 25 minutes. Take the mixture out of the oven and add the walnuts and raisins to the blueberries.
